Lemon Olive Oil Cake with Strawberry Balsamic Frosting

Lemon Olive Oil Cake 

1 cup Almond Flour 

1 cup Oat Flour 

1/2 tsp Salt 

2 tsp Baking Powder 

3 Eggs 

1/2 cup Lemon Olive Oil 

3 tbsp Honey 

1 tsp Vanilla Extract 

1/4 cup Coconut Sugar 


Strawberry Balsamic Frosting

 8oz Mascarpone Cheese

1 tsp Vanilla Extract 

1 cup Powdered Sugar 

1 cup Heavy Whipping Cream 

*Leave mascarpone and whipping cream in the fridge until you’re ready to make your frosting.

Lemon Olive Oil Cake 

Directions: 

  • Preheat oven to 325 degrees fahrenheit
  • combine oat flour, almond flour, salt, and baking powder into a bowl, put to the side 
  •  In a large mixing bowl beat together the coconut sugar and eggs, mixing in one egg at a time 
  • Once those are throughly combined, slowly add in the lemon olive oil, honey, and vanilla extract
  • Blend into a smooth texture, then slowly incorporate in the dry ingredients into your batter
  • Spray or line a 9 inch round baking pan with parchment paper 
  • Pour your batter into the pan
  • Bake for 25-30 minutes, depending on your oven the bake time may be shorter
  • When your cake has a golden brown color and the sides are pulling away from the pan, it’s time to take it out! 
  • Wait 10-15 minutes before removing the cake from the pan, onto a cooling rack

If you would like to skip the frosting , dust some powdered sugar on top and serve!

 

Strawberry Balsamic Frosting 

  • In the bowl of a hand or standing mixer, begin beating 8 oz mascarpone cheese on medium high speed, until mascarpone becomes fluffy.
  • Continue mixing and add the 1 tsp vanilla extract. 
  • Add in one cup confectioners sugar and continue beating until light and fluffy. Be careful not to over mix, the frosting will curdle. 
  • Turn the mixer up to high speed, very slowly add in 1 cup of heavy whipping cream until the frosting is light and fluffy. Again, careful not to over mix.
  • Now that you have your frosting, add in the 1 tbsp of strawberry balsamic, be sure to do this step slowly by hand with a wooden spoon or rubber spatula.
  • Taste test!! Add more strawberry balsamic if desired.
  • Make sure your cake is completely cooled before frosting.
  • Serve and ENJOY ! ( we love it paired with a cup of coffee )
