One Pan Chocolate Cake (or Cupcakes)
Featuring Olive Hill Blood Orange Olive Oil

Preparation time: 10 minutes
Ingredients
1 ½ cups of unbleached white flour
1/3 cups unsweetened cocoa powder
1 teaspoon baking soda
½ teaspoon salt
1 cup sugar
½ cup of Olive Hill Blood Orange Olive Oil
1 cup of cold/room temperature brewed coffee
2 teaspoons pure vanilla extract
2 tablespoons vinegar (I used White Balsamic, as that was on hand)
Instructions
To make, preheat the oven to 375 degrees
Sift together the flour, cocoa, baking soda, salt, and sugar into an un-greased 8 inch square or a 9 inch round baking pan.
Or mix in a medium mixing bowl if making cupcakes. This will make 12 cupcakes
using a cupcake lined cupcake pan.
In a small mixing bowl, measure and mix together the oil, coffee, and vanilla. Pour the liquid ingredients into the baking pan and mix the batter with a fork or a small Wisk.
When the batter is smooth, add the vinegar and stir quickly. There will be pale swirls in the batter where the baking soda and the vinegar are reacting. Stir just until the vinegar is evenly distributed throughout the batter.
Bake cakes for 25-30 minutes. Cupcakes 20 minutes.
Set the cake aside to cool.
I like to keep this low in calories and just sprinkle with powdered sugar. A simple chocolate glaze will dress it up nicely. Another idea would be to serve it with a nice Orange Compote with your favorite Olive Hill fruit-forward balsamic!
