Basil Olive Oil and Peach Balsamic Halibut Ceviche

Basil and Peach Halibut Ceviche

1 Pound Halibut

1 minced garlic clove

2 diced persian cucumbers

1 lemon juice

2 tbsp Basil Olive Oil

Salt and pepper to taste


sliced radishes

micro greens

sliced jalapeno pepper

drizzle Peach Balsamic



Dice Halibut into small cubes and lay out onto paper towl to remove excess moisture.

Prepare vinegarette in a blender or food processor.  Combining Olive Oil, lemon juice, garlic, salt and pepper, option to add basil or spinach for color and honey for sweetness.

Add halibut and diced cucumber to a bowl and gently mix in vinegarette.  Put bowl into the firdge to marinate for minimum of one hour, up to three hours. 

Remove bowl from fridge, and plate your ceviche.

Garnish withe radishes, jalapeno, micro greens, fresh cracked pepper, finish with a drizzle Peach Balsamic, and enjoy!
