Rosemary Olive Oil Shortbread Cookies

2 cups all purpose flour

2/3 cup powdered sugar

2 Lemon Zest

1 tsp salt

3/4 cup Rosemary Olive Oil (if desired, use 1/2 regular olive oil and 1/2 rosemary olive oil)



Prheat over to 325%

Line a 8 to 9 inch square baking pan with parchment paper

in a bowl, mix together flour, sale, powdered sugar, and lemon zest

slowly incorporate the olive oil until just comined into a moldable dough.

press the dough into the lined pan to make an even layer.  Poke dough all over with a fork.  Sprinkle with a little bit of additional salt before baking.

Bake for 35-40 minutes until golden brown. Let cool.  Cut into desired shape and enjoy!
